The purpose of Kitchen ventilation

Ventilation within a commercial kitchen environment is extremely important, not just from a comfort perspective, but also for health and safety.

The purpose of a kitchen extraction system is to provide a safe and comfortable environment for staff to operate in by removing heat, grease and moisture generated from the cooking equipment beneath it. It also ensures that gas fed equipment is supplied with enough air to allow complete combustion and to help eradicate carbon monoxide from a kitchen.

To ensure a safe and comfortable environment is always maintained our systems:

  • Provide sufficient clean, tempered make-up air (typically 85% of the total extracts volume). This ensures that the kitchen air quality is maintained at a high level and that gas fired equipment is always supplied with enough air for complete combustion of fuel. It also maintains a slight negative pressure ensuring that cooking odour never leaves the confines of the kitchen space.
  • Extracts air from as close as possible from the source of generation.  
  • Conform to gas regulations.
  • Each bespoke system is individually designed.
  • Conforms to the DW172 specification.
